Leftover Rice Cakes

A LONG TIME AGO...... I remember my grandma making rice pancakes for us. I remember them being pretty dang good. I asked her a few months ago if she remembered how she did them. I was so suprised to find out that they are so simple and that my kids love them so much! Grandma told me that it was a recipe that came from the time of the Great Depression.

Rice Pancakes:

1 cup cooked rice
1 beaten egg

Stir the rice into the egg and pour into pancakes on a hot griddle. Cook n both sides until golden brown. Top with maple syrup or fruit topping - or for a great dinner top with a cream soup with chicken or tuna and peas mixed in.

What a yummy simple way to use up leftover rice! I have made these with both white and brpwn rice and they are great.

So you make pancakes too? and really pour into the pancakes or pour like pancakes onto a hot griddle?

eMy mom made these, her mom made them too. The only difference is we mixed in crushed saltene crackers with the egg & rice, which adds a bit of salty flavor.
